Restaurant General Manager
Dinos heads up our team of around 40 waiters, managers and hosts to ensure the perfect dining experience at Laurent, something he is well familiar with following five years at Dabbous, Ollie Dabbous’ 1 Michelin star restaurant in Fitzrovia where he worked his way up from waiter to Assistant General Manager. Before joining Laurent at Café Royal, Dinos held the position of General Manager at the Henrietta hotel restaurant in Covent Garden.
Originally from Victoria, Australia, Sam is a familiar face on London’s fine dining scene. Following his move to the UK he studied at the Wine & Spirit Education Trust and spent 3 years at The Dorchester as Assistant Head Sommelier. Positions as Restaurant Manager and Head Sommelier followed at the Bulgari Hotel in Knightsbridge, the 1 Michelin star The Clove Club in Shoreditch and the Devonshire Club. Sam spent his first few months at Hotel Café Royal compiling the Laurent wine list which celebrates both old and new world, reflective of Café Royal’s heritage and history of once housing the greatest wine cellar outside of France and our forward thinking company ethos.
Ziggy’s Bar Manager
Robbie heads up our cocktail bar Ziggy’s, which pays homage to one of Café Royal’s most famed patron, the late David Bowie, who retired his alter ego Ziggy Stardust with a legendary party here in the 1970’s. The bar serves a modern twist on some of Bowie’s favourite drinks plus classics and innovative new creations by Robbie and the team. Robbie previously spent five years at Bar 1086 at the Four Seasons Hampshire before he took on the role of Bar Supervisor at the Coburg Bar at The Connaught.
Bars & Beverage Manager
Fabio is in charge of the bars at Hotel Café Royal including Ziggy’s and the Green Bar. In his capacity of Bars & Beverage Manager he not only oversees the daily running of the bars, but also selection and curation of all spirits and creation of new cocktails as well as concepts and seasonal campaigns. Fabio joined the team at Hotel Café Royal for the opening of Laurent in 2018 following eight years at The Connaught where he oversaw the Coburg Bar. His passions lie in spirit selection (whiskey is his favourite) and he enjoys blurring the lines between new and established producers, materials and production techniques. Fabio seeks out niche producers and drinks that evoke conversation and encourages diners to discover something new at our bars.
